Of the Four unique Wagyu Breeds raised in Japan, Miyazaki Wagyu is Japanese Black Wagyu, known as Kuroge Washu in Japan. This breed accounts for 90% of Wagyu raised in Japan. For it to qualify as Miyazaki Wagyu, the beef must grade A-4 or A-5. DeBragga sells only A5 Japanese wagyu beef. Less than 3 % of all Wagyu produced in Japan receives this Quality grade [grade is determined by several factors, including marbling ( 1-12), fat color (1-7), muscle color ( 1-7), firmness/tenderness of meat, and muscle dimension. If any of these criteria score less than perfect, it cannot be A-5].

The cattle are raised on pasture until 16- 18 months, and then fed an increasingly rich diet of grains, primarily barley-based, for more than 450 days. They are antibiotic- and hormone-free, and they are given no animal by-products in the feed. The animal husbandry is the finest is the world (though not massaged by young maidens today, they still consume the occasional beer!).

This was definitely the best beef I've had in my entire life! If someone wants to splurge on something and taste the best beef you'll ever have, you must order this, even if it's only a one time special occasion. It's definitely worth it! Makes every prime steak I've ever eaten taste like cardboard.
Will buy again. Small bites seemed best.

Honestly, I'd read some reviews that referenced it being too rich, and I didn't want to take the chance at that. I ordered the 24oz (1.5in thick or so), and after allowing it to come to room temp in the package, I took it out and sliced in about 1.5in wide pieces. Kosher salt only. One at a time, I used cast iron on a gas range and maintained a surface temp of 400 degrees F in the pan (infrared thermometer to check, its like $10 on amazon). It probably took a little under minute on each of the four sides for this to cook to med rare. I didn't want to add any flavors or spices into it so that we could experience only Wagyu. As soon as I took it off I sliced it thin on a bias to make it go further and served. It had a great crust on it and we felt it was best eaten in small bites like this so as not to overwhelm the palate. The sides for each course were roasted cauliflour, roasted potatoes, fried brussels sprouts, and baby arugala with citrus vinagrette. They seemed to pair nicely to contrast how rich this beef is.

I feel like it would have been a mistake to cook it as a whole steak for spending $380 just in case something went wrong (remember you have to pay for overnight shipping and that makes it way more expensive). It was plenty for four people with the sides. I saved the rendered fat as well and used it for a flavor base in fried rice later, and it was an awesome way to use every ounce you paid for!

This was one of two pieces of the Japanese wagyu that I ordered. I want this strip for a good Chef friend of mine. I wanted him to cook it his way. He choose to pan seared it to rare and baste it with a garlic butter. It came out perfectly rare with a nice crust. The flavor in this meat was like no other piece of beef that I have ever eaten. It was almost melt in your mouth tender. The marbling was amazing. We throughly enjoyed it and would and will order more. Now I know why they call this wagyu the best in the world.
