Delicious and unexpected!
I've made leg of lamb in the past but no one would eat it because of the gamie flavor. This lamb was amazing and addictive! We stuffed it with bacon, garlic cloves and herbs and slow roasted it on a spit over applewood. My 6 year old couldn't get enough of it and everyone raved!

Very tasty lamb flavor! I made slits and inserted garlic slivers all over the roast. I rubbed with good olive oil, kosher salt, fresh ground pepper and Greek oregano all over and roasted with thick cut potatoes slowly at 325' till 140' internal temp.
Last 15 minutes, I squeezed fresh lemon all over.
I will be ordering this Colorado lamb from you again without a doubt!
Nice looking cut of lamb, but did not have the lamb flavor we were hoping for.
