New York State Moulard Ducks are a gastronomic treasure. Every part of the delicious bird is used and can be in a variety of creative recipes. The foie Gras liver is prized in the Torchon.

The breasts are prepared lightly smoked or air-dried for unique prosciutto. And the legs are slowly stewed until they fall off the bone and are shredded into a fabulous spread called Rillettes.

With cristy bread, a favorite jam, sliced pears, and some pickled vegetables, you will have a platter that’s a meal in itself.

The breasts are prepared lightly Smoked or Air dried for a unique prosciutto* .Both are included here. Delicious thinly sliced and served with fresh pear slices

The legs are slowly stewed until they fall off the bone and are shredded into a fabulous spread called Rillettes. Slather on toasted bread or a toasty baguette with a sliced cornichon pickle. Absolute heaven

The Duck Prosciutto is cured in a beef collagen casing.
