Watermelon Salad With Honey Lime Dressing

There is no world in which there are ever any leftovers when you bring out this salad. Cold, crisp and summer-perfect.

Ingredients

Let's start with the dressing:

  •  3 Tbsp good honey, local is always best
  • 3 Tbsp fresh lime juice
  • 3 Tbsp good quality olive oil
  • Kosher salt and black pepper to taste

For the Salad:

  • Medium watermelon, cut into cubes and seeded if needed
  • 2 cups of small cubed cucumbers (less watery)
  • 15 fresh basil leaves, chopped or chiffonaded
  • 10 fresh mint leaves, chopped or chiffonaded
  • 1 cup goat or feta crumbles, if desired

Directions

  1. Make your dressing: whisk everything together
  2. Assemble your salad, everything into a big bowl with enough room to gently mix ingredients
  3. Combine the dressing with the watermelon mix and toss.
  4. If desired, top with the cheese.
