Watermelon Salad With Honey Lime Dressing
There is no world in which there are ever any leftovers when you bring out this salad. Cold, crisp and summer-perfect.- Prep Time 10 minutes or less

Ingredients
Let's start with the dressing:
- 3 Tbsp good honey, local is always best
- 3 Tbsp fresh lime juice
- 3 Tbsp good quality olive oil
- Kosher salt and black pepper to taste
For the Salad:
- Medium watermelon, cut into cubes and seeded if needed
- 2 cups of small cubed cucumbers (less watery)
- 15 fresh basil leaves, chopped or chiffonaded
- 10 fresh mint leaves, chopped or chiffonaded
- 1 cup goat or feta crumbles, if desired
Directions
- Make your dressing: whisk everything together
- Assemble your salad, everything into a big bowl with enough room to gently mix ingredients
- Combine the dressing with the watermelon mix and toss.
- If desired, top with the cheese.
