The DeBragga BLT

The classic, our way, features our own smoked, uncured bacon.

  • Cook Time 20 Minutes
 

Ingredients

  • Gloucester Old Spot Smoked Uncured Bacon, fried or baked
  • Crunchy, herbed Slaw (see recipe below)
  • Tomato Jam (see recipe below)

Directions

For the slaw, mix all in a bowl:

  1. 2 cups finely shredded & chopped savoy cabbage

  2. 2 tsp each finely chopped dill & parsley

  3. ¼ cup each mayo and sour cream
  4. Generous grind of Tan Hoi Black Pepper

For the tomato jam:

  1. Cut an x on the bottoms of 4 ripe tomatoes and drop into boiling water for 2 minutes. Plunge immediately into an ice water bath and peel. 

  2. Drain. Squeeze out most of the seeds and chop tomatoes coarsely. 

  3. Simmer in a pot with ¼ cup sugar and allow to cook down slowly until the tomatoes are jammy. 

  4. Store in fridge.

Assembly:

  1. Spoon tomato jam on the bottom slice of rye

  2. Top with bacon

  3. Top with crunchy herby slaw

  4. Top with another slice of rye
