Roasted Rib Chop With Red Wine & Garlic Sauce

(Recipe is easily doubled)
Ingredients
- 1 28 oz Rib Chop (or any size you want)
- 1 tsp Diamond Crystal Kosher Salt
- 2 tbsp Butter
- 1/2 cup Red Wine
- 1 tbsp Glace de Veau
- Handful of Garlic cloves
- Chopped Parsley, for garnish
Directions
- Bring your steak to room temperature and rub with kosher salt on all sides.
- Heat oven to 425.
- Heat an oven-safe skillet on high flame. Blot your steak well and lay it into the pan. Let it sear well (it will release from the pan easily) and flip it over. Once that side is seared, into the oven and roast to 124 internal temp.
- In a small skillet, melt the butter, add the garlic and saute a few minutes on medium flame, add the red wine and simmer a bit more, add your Glace de Veau and whisk smooth.
- Once your steak is done to your liking, let it sit a few minutes on a cutting board.
- Drizzle with your sauce, garnish with chopped parsley and serve with potatoes and vegetables.
