Red Wheat Berry Salad With Tahini Dressing
If you never tried Hard Red Winter Wheat Berries, you are in for a treat; we get them from Amazon and all you need is patience because they take a long time to cook. They are nuttly and chewy and add a perfect, surprising texture to salads.- Prep Time 2 hours

Ingredients
- 1 cup hard winter red wheat berries, rinsed
- 4 cups water
- 2t Kosher Salt
- 2 large shallots, diced finely
- 4 mini cucumbers, chopped
- 4 mini colored bell peppers, seeded and diced
- ½ cup (plus more if you want) Tahini Dressing
Directions
Prepare the Wheat Berries:
- Boil the Wheat Berries in a covered pan on medium low until softened but chewy. This can take 90 minutes to 2 hours.
- Make sure the water doesn’t run out; add more as needed.
- Drain when done. Toss with a couple teaspoons of Kosher Salt. You can do this a couple days before you need them.
- The day you want to serve the salad:
Mix together in a large bowl the shallots, cucumbers, bell peppers - Add your wheat berries to the veggie bowl and toss gently.
- Add however much Tahini Dressing you want; we start with a ½ cup and go from there.
- Toss completely. Let come to room temp to develop the flavors and mix again before serving.
