Pork and Apple Sausage with Bacon and Cabbage

Ingredients
Pork and Apple Sausage with Bacon and Cabbage
- 12 oz Niman Ranch Bacon, cooked and coarsely chopped (bacon drippings reserved)
- 1 lb pork/apple sausage
- 2 T olive oil
- 2 T good butter, salted
- 2 med onions, chopped
- 1 granny smith apple, peeled, cored and chopped
- 2 c thinly shredded red cabbage
- 1/3 c apple cider vinegar
- 1/3 c chicken or veg broth
- Kosher Salt & Pepper
- 3 T dark brown sugar
Directions
Prepare the Pork and Apple Sausage with Bacon and Cabbage:
- Heat bacon drippings in saute pan and brown sausages on medium heat for 8 minutes. Remove to dish and wipe out pan.
- Heat butter and oil til melted and sizzling.
- Add onions and apples and saute on low until softened, about 8 minutes.
- Add cabbage, salt, pepper and raise heat to medium and continue sauteeing for 5 minutes.
- Add broth, vinegar, bring to a simmer. Add bacon, and lower heat.
- Add brown sugar and combine completely by gently tossing the pan until everything blends.
- Add sausage back into the pan, cover and continue to cook on low until the sausage reads 155 degrees by inserting a thermometer into the center from either end.
- Serve with parslied, buttered noodles or potatoes.
