Pineapple Slaw
For something completely different, try this Pineapple Slaw; it’s sweet and tangy and a perfect go-with to whatever is coming off the grill.

Ingredients
- 2 bags cabbage slaw OR 1 small green cabbage, very thinly sliced (I go for fast and convenient when it’s hot!)
- 3 cups fresh pineapple, cut into small chunks
- 1 small orange or red bell pepper, small dice
- 4 scallions, sliced thinly
- 2/3 c white vinegar
- ½ cup good mayonnaise
- 1.5 Tbsp white sugar
- Kosher salt and black pepper to taste
Directions
- Toss into a large bowl: cabbage, pineapple, pepper, scallions
- In a separate bowl or shaker jar, add vinegar, mayo, sugar, salt and pepper and mix very well.
- Add dressing to cabbage bowl and gently combine
- .Let sit in fridge minimum 2 hours.
