Lamb Top Sirloin with Tahini Multi-Colored Slaw

Ingredients
- 4 Lumina Lamb Top Sirloin
- Olive Oil/ Kosher Salt/ Black Pepper
Directions
- Heat oven to 400°.
- Rub lamb with olive oil, kosher salt, black pepper.
- Lay on rack on a half sheet.
- Roast for 15 minutes, then remove from the oven and sear in scalding skillet for 3 minutes each side.
- Let rest and make your slaw.
For Your New Favorite Multi-Colored Slaw
Into a deep bowl:
- 2 bags multi-colored slaw mix
- 2 cups shredded carrots
- 1 seeded and diced jalapeño
For the Slaw Dressing
Into a large mixing cup or bowl:
- 6 cloves garlic
- Juice of two limes
- 2 t honey
- 2 T good Dijon mustard
- 1/2 c tahini
- 1 c apple cider vinegar
- 1/2 c Italian parsley
