Grilled Pork Chops With Salsa Verde
Something magical happens when you combine a perfectly grilled pork chop with a great salsa verde

Ingredients
- 2 Tbsp good quality olive oil
- 5 jalapenos, sliced in half lengthwise and seeded (we like the seeds)
- 1 small serrano chile, sliced in half and seeded
- ½ cup Spanish onion chopped finely
- 4 garlic cloves
- 1 tsp Kosher salt
- 1 cup cilantro, chopped
- Juice of half a lemon
- ¾ cup water
- Pork Chops
Directions
- Heat the olive oil on medium and add the peppers, onion and garlic. Let soften and brown a bit – saute for 5 minutes.
- Add the salt and cilantro and let the cilantro wilt.
- Transfer to a blender, add lemon juice and water.
- Puree.
- Grill chops for 6 minutes per side or to 145° and let rest a few minutes.
- You can brush some salsa verde on the chops before serving, or serve alongside.
