Grilled Mojo-Marinated Strips
Something about Mojo – that kick of fresh citrus is a summertime favorite. Use it on your steaks, on pork butt, and fish.- Prep Time 20 Minutes; 4 Hours to Marinate

Ingredients
Everything is going into the blender, so, don’t spend too much time chopping finely

5 garlic cloves

¾ cup chopped vidalia onion

1 cup orange juice

½ cup fresh lime juice

½ cup cilantro
-
2 tsp Kosher salt

2 tsp any hot pepper sauce you have

1 tsp ground cumin

1 tsp fresh ground pepper

1 cup olive oil
Directions
Into your blender in this order:
- Onion and garlic: pulse
- Juices, cilantro, salt, hot sauce cumin, black pepper: blend
- Olive oil: blend til smooth puree
- Put your steaks into a sealable bag and add enough Mojo to cover the steaks. Press out any air and seal. Refrigerate for 4-8 hours and bring to room temperature while your grill heats up.
- I give the steaks a quick rinse and dab dry with paper towels before grilling.
- Over high heat, grill your steaks 3 minutes on each side then move to moderate heat and grill another 3-4 minutes each side.
- For medium rare, shoot for 124° but I take it off the flame at 120° and let rest.
- Serve with fresh Mojo on the side if you want.
