Easy Brined and Grilled Pork Chops
This is a great recipe to try your hand at brining – it’s super-simple, you can customize it with whatever you want: peppercorns, bay leaves, etc.- Prep Time Brined for 4-12 hours
- Cook Time 15 minutes
Ingredients
For the Brine:
- 2 cups water
- ½ cup Kosher Salt (Diamond Crystal Red Box)
- ½ cup white sugar
- 2-3 cups ice water
Pork Chops:
- 4 12 oz. pork chops
Directions
- Into a large pan: 2 cups water, salt, sugar and heat until salt and sugar are dissolved. Remove from heat.
- Add ice water to cool down the brine.
- Put chops into a zip-lock bag and gently add the cooled brine, flatten out the air if you can. Place in fridge for minimum 3 hours, maximum 12 hours, remember the longer you brine the more flavor you add. Try not to go past 12 hours; things might get mushy.
- When ready to grill, rinse the chops and pat dry.
- DISCARD the brine; do NOT re-use.
- Grill chops for 6 minutes per side or to 145° and let rest a few minutes.
