Smoked Ham & Gruyere Ciabatta
Our own GOS Smoked Ham with some spicy surprises.- Prep Time 1 Hour
- Cook Time 15 Minutes
Ingredients
- GOS SMOKED UNCURED HAM, THINLY SLICED
- 2 T CITRUS JALAPENO SAUCE (RECIPE FOLLOWS)
- 2 T HONEY MUSTARD SAUCE (RECIPE FOLLOWS)
- ¼ CUP GRUYERE, FINELY GRATED
For the Citrus Jalapeno Sauce:
- 1 c Orange Juice
- ½ c Honey
- 1/3 c Apple Cider Vinegar
- 1 1/3 c Sliced Jalapenos in Vinegar
- 1 c cold water = 2 T cornstarch
For the Honey Mustard Sauce:
- 1 1/3 c Sliced Jalapenos in Vinegar
- ½ c Good Whole Grain Mustard
- ½ c Mayo
- ¼ c Honey
- 2 tsp Kosher Salt
- Few shakes Cayenne Pepper
Directions
- Bring everything except the cold water and cornstarch to a rolling boil.
- Remove from heat and use immersion stick to puree, then return to medium heat and whisk in water and cornstarch to thicken.
- Cool and store in the fridge.
Assemble the Ciabattas:
- On the bottom half, a thick smear of honey mustard sauce
- Top with a pile of GOS Smoked Ham
- Top the Ham with a pile of Gruyere
- Slather Citrus Jalapeno Sauce on the top half of the Ciabatta and lay on top of the Gruyere.
- Press sandwich onto a hot griddle or pan with a bit of olive oil and allow to toast slightly.
