SMOKED HAM AND CREAMY CABBAGE SOUP w/BACONY CROUTONS

Cozy up in front of a fire with a bowl of our soul-soothing soup.

Ingredients

  • 3T butter
  • 2T olive oil
  • 2 medium Vidalia Onions, chopped
  • 2 medium Carrots, diced
  • 4 ribs celery, diced
  • 5 cloves garlic, smashed
  • 2 cups cubed GOS Smoked Uncured Ham
  • 4 cups chicken stock
  • 5 cups cream

Directions

  1. Heat butter and oil til shimmering in a stockpot.

  2. Add all veggies and garlic and saute for 7 minutes, stirring occasionally over medium heat; allow veggies to soften a bit.

  3. Add GOS Smoked Uncured Ham and stir into veggies for 2 minutes.

  4. Add stock and simmer the soup for 25 minutes.

  5. Stir in cream and simmer gently until completely combined.

  6. Serve with Bacony Croutons

For the Croutons:

2 cups day-old Brioche, cut into 1” cubes

5 strips GOS Smoked Uncured Bacon, diced

Slowly render the bacon in a frypan; remove bacon and add to soup pot.

Toast brioche cubes in rendered bacon fat; cool on paper towels and store in an air-tight container when completely cooled.
