SMOKED HAM AND CREAMY CABBAGE SOUP w/BACONY CROUTONSCozy up in front of a fire with a bowl of our soul-soothing soup.

- 3T butter
- 2T olive oil
- 2 medium Vidalia Onions, chopped
- 2 medium Carrots, diced
- 4 ribs celery, diced
- 5 cloves garlic, smashed
- 2 cups cubed GOS Smoked Uncured Ham
- 4 cups chicken stock
- 5 cups cream
Heat butter and oil til shimmering in a stockpot.
Add all veggies and garlic and saute for 7 minutes, stirring occasionally over medium heat; allow veggies to soften a bit.
Add GOS Smoked Uncured Ham and stir into veggies for 2 minutes.
Add stock and simmer the soup for 25 minutes.
Stir in cream and simmer gently until completely combined.
- Serve with Bacony Croutons
For the Croutons:
2 cups day-old Brioche, cut into 1” cubes
5 strips GOS Smoked Uncured Bacon, diced
Slowly render the bacon in a frypan; remove bacon and add to soup pot.
Toast brioche cubes in rendered bacon fat; cool on paper towels and store in an air-tight container when completely cooled.
