Kosher Salt & Freshly Ground Pepper
Take your skirt steak out of the refrigerator and let sit at room temperature for 30 minutes.
Season your steak with salt and pepper on both sides.
Heat your skillet on high and add steak. Sear each side one-and-a-half minutes. Measure the internal temperature; if it has not yet reached 130 degrees, lower your flame and cook an additional 1 minute on each side.
Let rest under tented foil for 10 minutes before serving.
