This is exquisite lamb. Not at all fatty and yet extremely tender, with a sweet, delicate flavor that only comes from finishing on apples. It is very rare to have lamb of this caliber to offer. DeBragga’s apple-fed lambs are born in the spring, and raised on mother’s milk and pasture until August, when we add barley to the diet. Toward the end of August, we introduce the fresh apples into their feed, along with the barley. They are harvested early Fall, antibiotic- and hormone-free.Our 2018 harvest will be available early November

You purchase the fresh lamb whole, and we break it into familiar pieces for your dining pleasure. This “carcass pack” includes:

  • 2 x Racks 8 ribs each
  • 6 x 2 Loin chops for a total of 12 chops
  • 1 x 2 racks of St. Louis-style spare ribs
  • 2 x 2lb packages stew meat from shoulder
  • 2 x legs (boned, rolled and netted, then packed separately)
  • 2 x 2 shanks each package, each pack including one fore shank and one hind shank
  • 4 x 1lb packs ground lamb
  • 1 x glace de veau demi-glace

All you need for a fabulous holiday season. Freeze what you don’t use right away to enjoy all winter long!
