The best roast I've ever had!

This the most incredibly delicious beef I've had. Our family has enjoyed the dry aged prime rib roast for the past two holiday seasons and now it's become a tradition. My son says it's not Christmas without it! I roasted it on low (250) for about 2 hours (internal temp of 125. Then "seared on high 500 degree for about 10-15 minutes. Before guests sat down to finish. It had a beautiful crusty exterior and moist pink interior (internal temp 135). A homerun!
