Recipe: Anti Turkey Crown Roast of Pork



Ingredients:

1 each pork roast (about 8-9 lbs)
1 lb pork & porcini sausages, casings removed
2 each apples
2 each pears
1 each sage
2 teaspoon kosher salt
1 teaspoon cracked black pepper
3 tablespoons olive oil
0.25 cup white wine
2 cups Glace de Veau veal demi glace



Steps:

  1. PREHEAT OVEN TO 350, PLACE PORK IN ROASTING RACK

  2. CHOP SAGE AND MIX WITH OIL AND SEASONINGS. RUB ALL OVER PORK ROAST

  3. CRUMBLE PORK SAUSAGE BY HAND AND STUFF INTO CENTER OF ROAST

  4. SLICE APPLES AND PEARS AND PLACE AROUND PORK IN ROASTING PAN

  5. ROAST FOR ABOUT 2 HRS UNTIL THE INTERNAL TEMPATURE IS 160 DEGREES

  6. WHILE PORK IS RESTING DEGLAZE PAN WITH WHITE WINE AND COOK FOR 2-3 MINUTES ON HIGH HEAT

  7. ADD DEMI GLACE AND SIMMER 4-5 MINUTES UNTIL THICK. SEASON WITH SALT AND PEPPER

  8. SLICE BETWEEN THE BONES PLACE ON PLATTER AND SERVE WITH SAUCE, FRUIT AND PORK
