NEW YEARS MENU
Whole Australian Wagyu Tenderloin with Mushroom Truffle Sauce
1 Whole Australian Wagyu Tenderloin (3.5lbs) tied
2 tbsp Black Truffle Butter
1 14oz container Glace de Veau
½ lb Crimini Mushrooms, cleaned and sliced.
1/4 cup red wine
Salt and Pepper
Neutral oil
Filet
Preheat oven to 500 degrees
Season tenderloin with salt, pepper, and tbsp. of oil
Place on a baking sheet lined with foil and place in oven.
Cook at 500 for 22-25 minutes. 25 minutes will result in medium rare doneness.
Allow to rest outside of oven for 20 minutes and then slice.
Sauce
In a large sauté pan, cook mushroom until golden brown.
Deglaze pan with red wine.
Once wine is reduced, add Glace de Veau.
Cook for about 3 minutes, then swirl in truffle butter and cook until sauce has a glossy sheen.
Serve filet slices with sauce spooned over.
Devils on Horseback
24 dates, pitted
3 packages of Edwards Surry Ham Slices
½ cup crumbled blue cheese
Preheat oven to 225 degrees.
Line a baking sheet with foil and place a wire rack over the baking sheet.
Place 24 toothpicks in water to soak.
Halve each date but do not cut all the way through.
Stuff each date with blue cheese crumbles.
Cut ham slices into ½ in strips.
Wrap each date with ham and secure with soaked toothpick.
Place on wire rack on top of baking sheet and cook for 25 minutes until cheese is melted and ham crsips on the ends.
Serve warm.
New Year’s Brunch Frittatta
1 dozen whole eggs
2 cups ricotta cheese
½ cup shaved parmesan cheese
1lb Sweet Italian Sausage crumbled and cooked through, then cooled
1 cup diced tomatoes
1 cup diced zucchini
¼ chopped fresh basil
Salt and Pepper
Olive Oil
Preheat oven to 400 degrees
In a large bowl, whisk eggs together.
Add all remaining ingredients and mix well
Place a large non stick pan on medium high heat with 2 tsp of olive oil
Once pan is hot, add egg mixture.
Using a rubber spatula, carefully stir ingredients.
Once the eggs begin to set, place in over.
Cook in over for 10 minutes or until completely set.
Remove and sprinkle with more parmesan cheese
Slice and serve warm.
