This is a traditional dry cured Italian sausage, made of pure bred Berkshire pork that is coarsely ground and then seasoned by the addition of ground hot chiles.  The result is a bracingly spicy sopressata guaranteed to wake up your palate!  Serve very thinly sliced with some olives and a glass of pastis or dry sherry as the perfect way to start a meal. Each Sopressata is approximately 1 pound.
