The Tri Tip Steak, also known as Triangle Steak, is a close cousin to what the French call “Culotte Steak”. It is cut from a triangular section where the sirloin meets the round and the flank. The Wagyu tri-tip has a full beefy flavor because of excellent marbling and is very tender if not overcooked. The fat should not be trimmed until after cooking because it helps to seal in the juices, keeping the meat tender. The tri-tip is excellent grilled, baked or broiled, makes an wonderful London Broil and is also a great steak to be marinated prior to grilling.
Cook until it reaches 130F and then allow to rest for ten minutes.
